  1. Start by preheating the grill on high. Submerge wooden skewers in warm water. Separate leaves of romaine.

  2. In a large bowl combine onion, ketchup, ground beef, Cheddar cheese, salt, and pepper. Mix until all ingredients come together. Divide meat into 8 portions and form each into a log around 1 skewer.

  3. Place skewers on the hot grill and cook for 8 minutes or until cooked through, rolling around the grill every few minutes*.

  4. Serve each skewer on a romaine lettuce leaf topped with sliced tomato and thousand island dressing.
